      New Edition of Educational Institute’s HACCP Textbook Offers Latest Information on Critical Food Safety Issues

      Lansing, Michigan, September 2008 - The American Hotel & Lodging Educational Institute (EI) has published a new edition of "Food Safety: Managing with the HACCP System," an easy-to-understand textbook that provides hotel and restaurant food service managers, staff members, and students with the essential information they need to implement a comprehensive food safety system that targets every phase of food production and service.

      The book was written by Dr. Ronald F. Cichy, CHA, CFBE, CHE, professor and director of The School of Hospitality Business at Michigan State University, who has 24 years of experience as an author of food safety books.
