      Security and Loss Prevention Management Author Highlights Changes to Popular EI Textbook

      The third edition of the Educational Institute textbook, Security and Loss Prevention Management, by David M. Stipanuk and Raymond C. Ellis Jr., has been substantially updated to reflect current safety and security issues in the hospitality industry, presenting best practices and guidance related to risk management in the hospitality workplace. The task of revising the book was largely the work of Stipanuk, as Ellis passed away in May 2012, after a long and distinguished career in hospitality. Ellis' contributions are still a large part of the new edition, though.

      "There is a wonderful legacy in the book with what Ray Ellis did in his career of service to the American Hotel & Lodging Association (AH&LA) and to the University of Houston. Ray brought so much to the first and second editions of the book. That needed to be honored and sustained where the material maintained valuable lessons for the industry," said Stipanuk.  "Ray built a phenomenal foundation. We didn't want to pursue new material at the expense of the tried and true."  

      The textbook includes new chapters on the legal aspects of hotel security and safety, day-to-day safety issues in hotels, and employee safety. The new chapter on "Lodging Safety" covers slips, trips, and falls; fire safety; water safety issues; emergency power issues; indoor air quality; foodborne illness; and bed bugs. The new chapter on "Employee Safety" covers the business case for employee safety and addresses how hotels can effectively manage their operations with safety in mind. Stipanuk noted, "There are more costs to hotels for injured employees than for big disasters."

      Other new information in the book includes information about guest and meeting planner rankings of security and safety practices and expanded discussion of emergency management, with additional materials about natural disasters and terrorism.  The textbook includes information related to the 9/11 attacks, the Mumbai hotel bombing, and even the April 2013 Boston Marathon bombing.

      "While hotels were not a target in Boston, there were several hotels in and around the site of the bombing," Stipanuk explained. "It was important to share how those hotels responded, what their crisis management strategies were. We wanted to show how hotels and hotel managers can respond in challenging circumstances." 

      The book is available with an online component, Eye on Awareness®: Hotel Security Training. In addition, the instructor resources available on EI's website have been expanded to include links to websites and online videos that provide additional information beyond what is discussed in the text, as well as supplemental legal cases and an appendix covering Occupational Safety and Health Administration (OSHA) regulations for the lodging industry. Readers can access the online material by visiting the instructor resources tab on the book's product page on EI's website or by scanning a QR code found in the book's front matter-a first for any Educational Institute textbook.

      "The web links and online videos support and illustrate the ideas in the book," said Stipanuk. "For example, there is a link to a video of the Gaylord Opryland Hotel lobby after the May 2010 flooding in Nashville that illustrates that event in ways that print just can't convey."  He noted that these additional resources will enable instructors, students, and professionals to easily find resources on security and loss prevention topics from a variety of organizations and media outlets, enabling more in-depth study and research.
